Pecan Pie with Spiced Cream
by Ron Popp-The Farmhouse cafe.
4 eggs
3/4 cup brown sugar
1/2 tsp salt
3/4 cup corn syrup
1 tsp vanilla
1 tsp fresh lemon juice
1 TBS molasses
Mix together the first 7 ingredients. Add melted butter and mix again. Put pecans on the bottom of an unbaked pie shell, then top with mixture.
Bake for 30-40 minutes on the center rack. Cool.
Spice Cream:
2 cups whipping cream
1/2 cup powdered sugar
1/2 tsp. vanilla
1 tsp. cinnamom
1/2 tsp. nutmeg
Whip whipping cream. As it begins to stiffen add powdered sugar, vanilla, cinnamon, and nutmeg. Continue to whip until stiff. Top cooled pie, sprinkle with pecans.
