Sweet Potato Custard Pie

2 cups cooked, mashed sweet potatoes
1 cup brown sugar
1/4 cup butter or margarine
1/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
3 eggs, beaten
1 cup evaporated milk
unbaked 9-inch pastry shell


Preheat oven to 450° F.

Blend sugar, butter or margarine, salt and spices. Stir into sweet potatoes. Add eggs and milk, beating into potato mixture until smooth.

Pour into pastry shell. Bake in 450 degrees oven for 15 minutes. Reduce heat to 300 degrees and continue baking about 45 minutes longer or until pie tests done.
