Clone to Outback's Alice Springs Chicken
Honey Mustard Marinade:
1/2 cup Grey PouponŽ Dijon Mustard
1/2 cup honey
1 1/2 tsp. vegetable oil
1/2 tsp lime juice
Chicken:
4 skinless boneless breast halves
1 Tsp oil
2 cups sliced mushrooms
2 Tsp butter
salt, pepper, paprika
8 slices cooked bacon
l cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
2 tsp parsley
Make Marinade; pour 2/3 over chicken and marinate covered at least 2 hours.
Sear chicken in pan with oil 3-4 minutes until golden brown; cook until no longer pink
Preheat oven to 375° F.
Saute mushrooms in butter.
Brush each cooked breast with reserved marinade.
Stack 2 pieces of cooked bacon crosswise on each breast.
Spoon sauteed mushroom onto bacon.
Add cheeses and bake 7-10 minutes or until cheese is thoroughly melted and bubbly.
Sprinkely with parsley before serving.
