Bourbon Chicken
1 lb. chicken breast, cut into bite-size pieces
4 oz. soy sauce
1/2 cup brown sugar
1/2 tsp. garlic powder
1 tsp powered ginger
2 tbls. diced minced onion
1/2 cup bourbon (any)
2 tbls. white wine
Mix all the marinade ingredients and pour over chicken in a bowl. Cover and refrigerate for several hours or overnight if possible.
Bake at 325 for 1 hour, (single layer). Baste every 10 minutes. Place chicken in serving dish.
Scrape all pan juices with brown bits into frying pan. Add the 2 tbls white wine. Stir while it is heating. Pour over chicken. Serve with rice or linguine noodles.
