Cara Mia Chicken
1 large frying chicken cut up
seasoned salt and garlic salt
Bisquick for coating
1 jar marinated artichoke hearts
1 large can tomatoes
2 cloves garlic minced
1 Tbs. salt (I use 1/2 Tbs.)
1 Tbs. Accent®
1/2 Tbs. oregano
1/2 Tbs. basil
1/2 Tbs. pepper
1/2 pound fresh mushrooms sliced
1/2 cup dry sherry
Preheat oven to 350° F.
Season chicken with a little seasond salt and garlic salt and dip each piece in Bisquick.
Place in a pan and bake uncovered for 1/2 hour.
Combine tomatoes, artichoke hearts, garlic, mushrooms,and all spices in pan and stir.
When thoroughly mixed, pour over chicken.
Cover and bake in 350 degree oven for 1 hour.
During last few minutes, add sherry.
Serve garnished with chopped parsley.
