Chicken: Chicken Fricassee

Family Circle recipe.
Chicken Fricassee

1 broiler-fryer (about 3-1/2 pounds), cut up
1 (10 1/2 oz.) can chicken broth
12 small white onions, peeled and left whole
1 small onion, stuck with 4 cloves
1 small carrot, diced
3 tablespoons chopped parsley
2 teaspoons salt
3 peppercorns
1 bay leaf
1/2 stick butter or margarine, softened
1/4 cup flour
3/4 cup heavy cream
1/2 pound fresh mushrooms, sliced or 2 cans (4-oz.ea.) sliced mushrooms, drained
1/4 teaspoon leaf thyme, crumbled
1/2 teaspoon paprika


Preheat oven to 350 degrees F.

Pull off a 22-inch length of 18-inch wide heavy-duty aluminum foil. Place in center of reusable giant round aluminum foil casserole, 9-1/4x2-7/8-inches (about 10 cups). Press foil up and around inside of casserole, leaving enough foil to seal tightly. (I used a small roaster pan).

Arrange chicken pieces in foil-lined casserole. Add broth, white onions, onion stuck with cloves, carrot, parsley, salt, peppercorns and bay leaf. Close and seal foil.

Bake in moderate oven (350) for 1 hour and 45 minutes.

Carefully open foil. With tongs or slotted spoon, remove onion stuck with cloves and bay leaf. Mix butter with flour and drop, bit by bit, into liquid, stirring well as you do. Then add heavy cream, mushrooms and thyme, stirring well again. Re-seal foil.

Continue baking 15 minutes longer or until sauce is thickened and chicken is tender. Sprinkle with paprika before serving.
