Chicken Marylands with Rosemary
50g (2 oz) butter
2 cloves of garlic, crushed
1 lemon, juiced
1/2 bunch rosemary, leaves only
4 chicken Marylands (it is the drumstick (leg) attached to the thigh (in one piece)
Rock Salt
Melt the butter in a saucepan, add the garlic, lemon juice and rosemary and give a stir. Place the chicken in a baking dish and pour over the butter mixture. Sprinkle on some rock salt and bake in a moderate oven 180c for about 45-50 minutes. Serve with some crunchy potatoes.
Serves 3-4.
