Chicken Meat Loaf

1 pound ground chicken
1 cup crushed saltine crackers -- (24 crackers)
1/2 cup minced fresh onion
1/4 cup water
2 tablespoons minced green bell pepper
2 tablespoons ketchup
1 tablespoon Dijon mustard
1 teaspoon prepared horseradish
1/2 teaspoon paprika
1/4 teaspoon pepper
Vegetable cooking spray
Combine all the ingredients except cooking spray in a bowl, and stir until well-blended. Pack mixture into an 8 x 4-inch loaf pan coated with cooking spray. Bake at 350 degrees for 45 minutes or until done.

Make the loaf freeform and put this yummy glaze all over and baked it for 50 minutes.
