Chicken in Vegetable Sauce
3 pounds skinned meaty chicken pieces (minus the fat)
Old Bay seasoning spice
Fresh black pepper
1 large onion, finely chopped
1 teaspoon chicken bouillon base
3 carrots, finely chopped
2 ribs celery, finely chopped
6 mushrooms, finely chopped
1 large clove garlic, minced
3 tablespoons snipped parsley
1 (10 3/4 oz) can condensed tomato soup
1 soup can water
Flour (2 to 3 tablespoons)
Hot fluffy rice
Place chicken parts in a 3-quart Dutch oven. Sprinkle generously with Old Bay seasoning spice and black pepper. Add all of the chopped vegetables. Sprinkle with garlic and parsley.
Combine tomato soup, water, chicken bouillon, a few shakes Old Bay spice seasoning and black pepper; pour over chicken. Cover and bring to a boil; reduce heat and simmer 1 hour and 20 minutes. When done, skim off any fat and stir in flour mixed in 1/4 cup cold water. Cook gently 3 minutes or thickened. Serve chicken with sauce over hot fluffy rice.
