Chicken with Artichokes and Tomatoes
3 boneless skinless chicken breasts
salt and pepper to taste
4 cloves garlic, minced
2 (14 oz.) cans diced tomatoes, undrained
1 pkg. (9 oz?) frozen artichoke hearts
2/3 cup white wine
1 tsp. oregano
Slice chicken in half so you have 2 thin pieces. Salt and pepper each piece. In large skillet, pitch in some oil and cook the garlic a little, but don't brown. Lightly brown chicken on both sides and add remaining ingredients. Cook for about 25 minutes or until chicken is done.
