Chicken with Lemon-Butter Sauce and Capers
Betty Crocker cookbook
1 lb turkey (or chicken) breasts cut into medallions
2 TBSP Butter
2 TBSP Olive Oil
3 TBSP Lemon Juice
2 TBSP Butter
3 tsp capers (drained)
Pound the chicken (or turkey) between sheets of plastic or wax paper, until 1 inch thick.
Put 2 tbsp butter and olive oil in pan over med high heat. Saute chicken pieces in 2 or three batches, cooking 1 1/2 min per side. Continue with other pieces til all cooked. Remove chicken to a plate.
Combine butter lemon juice and capers and heat over med high heat scraping pan and heat until it boils.
Serve over chicken. This was great over pasta.
