Mimi's Zippy Red Pepper Chicken
1 whole chicken, cut up
1 cup white rice
Red pepper pasta sauce
2 Tbl. apple cider vinegar
1/2 cup sherry
1 tsp. Worcestershire sauce
1 cup water
1/2 tsp. cinnamon
1 tsp. granulated garlic
1/2 tsp. dried basil
1/2 tsp. curry powder
1 t. salt
1/4 sp. white pepper
12 tiny stuffed green olives
Brown the chicken in a little olive oil. Transfer the chicken to a crockpot in which rice has been spread in the bottom.
Combine the remaining ingredients, except for the olives, and pour over the chicken. Sprinkle the olives on top.
Cover and cook on high 1 hour. Reduce to low and cook for 3-4 more hours.
