All-In-One Chicken Dinner
2 lb boneless, skinless chicken thighs
4 large potatoes, quartered
4 carrots, thick sliced
2 cups water
Pinch of salt and pepper.
Throw it all in a crockpot and cook on low for eight hours. The end result is moist tender chicken and rich tasting vegetables.
Left over chicken is ideal for chicken salad or stuffed in a wrap with some salad for fast lunches.
