Drunken Chicken
4 boneless, skinless chicken breasts
1/4 cup rum (light or dark)
1/4 tsp grated nutmeg
1 T. soy sauce
1T. fresh squeezed lime juice
1T. brown sugar
1/4 tsp. crushed red pepper
1/4 tsp. fresh minced ginger root
2T. butter or margarine
8 oz. mushrooms sliced (or more)
1 c. sour cream
In small bowl combine marinade ingredients (rum, nutmeg, soy sauce, lime juice, brown sugar, red pepper and ginger).
Mix well and poor over chicken.
Marinate, covered in the refrig for several hours. Remove Chicken from marinade-save marinade.
Melt butter in skillet.
Saute' Chicken until golden and cooked through. Remove to
serving platter and keep warm.
Add mushrooms and saute' until well browned. Add reserved marinade and heat for 2-3 mins.
Gradually add sour cream, stirring to blend.
Cook sauce over low heat for 5-10 mins. until slightly thickened.
Serve sauce over chicken breasts.
Sprinkle with addition nutmeg is desired.
To serve over pasta double the marinade ingredients and Sour Cream.
