Gourmet Chicken Breasts
4-6 bloneless, skinless chicken breasts
4-6 fresh mushrooms, quartered
dash of pepper
1/4 C. butter or margarine
3 Tbsp. green onions, sliced
2 Tbsp. green pepper, chopped
1 tsp. dried parsley
3 Tbsp. white wine
Heat grill.
Place 1 chicken breast between 2 pieces of plastic wrap.
Working from center lightly pound chicken
with flat side of mallet or rolling pin until about 1/8th to 1/4-inch thick; remove wrap. Repeat with remaining chicken breasts.
Place 4 mushroom pieces on each chicken breast; sprinkle with pepper. Fold in sides; roll up jelly-roll fashion.
Secure with toothpicks.
Place chicken on grill over medium heat. Cook 10-15 minutes or until chicken is fork tender and juices run clear.
Sauce: Melt 1/4 cup butter or margarine in small saucepan. Add onions and peppers.
Cook and stir until crisp-tender. Add parsley and wine. Bring to a boil; remove from heat.
Serve warm over chicken.
