Grilled Chicken Breast Stuffed with Prosciutto and Saga Blue Cheese
2 boneless chicken breasts with skin (about 1 lb)
2 sticks saga blue cheese (about 2 by 1/2 by 1/2 inch)
2 slices prosciutto or ham
1 tbsp. Worcestershire sauce
1 tbsp fresh lemon juice
3 bbsp. dry sherry
2 tbsp. unsalted butter
Insert a sharp knife into the thicker end of each breast half and cut a lengthwise pocket carefully, making it as
wide as possible without puncturing the sides.
Wrap blue cheese in prosciutto or ham, enclosing it. Insert the packages in the chicken pockets and seal the opening well with a toothpick so it doesn't leak.
In a saucepan bring Worcestershire sauce, sherry and lemon juice to a simmer, remove the pan from the heat and swirl in butter.
Salt, pepper and season chicken and grill on a slightly oiled rack over glowing coals or in an oiled grill pan (cast iron will work).
Baste frequently with sauce for 10 to 12 minutes on each side.
Discard unused sauce.
