Light Hearted Barbecue Kabobs
1 1/2 lbs lean ground chicken
1 tbsp Worcestershire sauce
1 cup QuakerŽ Oats any variety,uncooked
3 tbsp skim milk
1 egg,
slightly beaten
1 tsp salt
1/2 tsp black pepper
1 tbl horseradish
16 cherry tomatoes
24 green pepper
pieces, approx
1 1/2" square
16 medium-sized mushrooms
1/2 cup barbecue sauce
Combine ground chicken, QuakerŽ Oats, egg, salt, pepper, horseradish, Worcestershire sauce, and milk.
Shape mixture into 24 meat balls.
Alternate green pepper pieces, 3 meat balls, tomatoes, and mushrooms on eight 30 cm (12") metal skewers.
Brush with barbecue sauce.
Place kabobs over hot coals or in broiler 15 cm (6") from source of heat.
Cook about 8 minutes. Turn; brush again with barbecue sauce. Cook 4-8 minutes or until done.
Serve with additional barbecue sauce.
Yield: 8 servings.
