Lemon Herbed Chicken


3/4 cup Quaker� Oat Bran hot cereal, uncooked
2 tsp lemon juice
1/2 tsp garlic powder
1 tbsp) water
1/4 tsp pepper 6 boneless chicken breasts
1/2 tsp salt
1/4 cup snipped fresh
parsley OR (1 1/2 tsp) dried parsley flakes
1 egg white, lightly beaten


Quaker� Oat Bran can be used to replace all of the flour, cracked crumbs, croutons, crushed cereal or bread crumbs in your favourite chicken, fish, or vegetable coating.

Instructions:
Heat oven to 180�C (350�F).

In a shallow dish, combine Quaker� Oat Bran, garlic powder, pepper, parsley, and salt; mix well.

In another shallow dish lightly beat egg white and water together.

Dip chicken into egg mixture, then coat with oat bran mixture.

Place coated chicken pieces on a broiling pan. Sprinkle lemon juice evenly over chicken pieces.

Bake 50-55 minutes or until chicken is tender and coating is lightly browned.

Remove chicken to serving platter. Squeeze lemon wedge over chicken before serving, if desired.

Yield: 6 servings.
