Chicken: Lemon Rosemary Chicken

Lemon Rosemary Chicken

1 chicken
1 lemon
2 garlic cloves (to 3)
2 teaspoons dried rosemary, crushed
1/4 teaspoon coarsely ground black pepper
Olive oil
3/4 lb. potatoes, cut into eighths
3/4 lb. carrots, peeled, cut into 1/2 inch thick slices


Preheat oven to 375degrees F. Rinse chicken, pat dry with paper towels. Place chicken breast-side up in Deep Dish Baker. Zest lemon. Press garlic. Combine lemon zest, garlic, rosemary, pepper and salt to taste.

Rub olive oil on chicken and rub 1 Tbl. of herb mixture on chicken. Cut lemon into slices and place in cavity of chicken. Cut potatoes and carrots, place in bowl with remaining herb mixture, toss until coated.

Arrange vegetables around chicken in bottom of Baker. Cover with Baking Bowl. Bake til done.
