Lemon Teriyaki Glazed Chicken

Amount Measure Ingredient -- Preparation Method

8 bone-in, skinless chicken thighs
1/2 cup fresh lemon juice
1/2 cup reduced-sodium soy sauce
1/4 cup sugar
3 Tbsp brown sugar
2 Tbsp water
3 to 4 cloves garlic -- finely chopped
1/2 to 3/4 teaspoon ground ginger
hot cooked basmati rice


Rinse chicken with cold water and pat dry with paper towels.

In a large non-stick skillet, combine all ingredients except chicken. Cook over medium heat 3-4 minutes.
Add chicken. Simmer about 30 minutes or until chicken tests done, turning chicken several times .

Serve over hot cooked rice.
