Mai Tai Chicken
1/2 cup soy sauce
1/4 cup fresh ginger
2 Tbl. Chinese 5 Spice
1/8 tsp. Kosher or sea salt
1/8 tsp. black pepper
4 (10 oz.) chicken breasts
1 Tbl. cornstarch
1/4 cup water
2 cups Mai Tai mix
1 Tbl. Da Fruta passion fruit juice
1/4 cup dark rum
Combine soy sauce, salt, pepper, Chinese 5 Spice and ginger. Marinate chicken (leave skin on) in mixture for 4 hours in refrigerator.
Bake 20 minutes at 350 degrees.
To make sauce, dissolve cornstarch in 1/4 cup water. Whisk together Mai Tai mix, dark rum, fruit juice and cornstarch in a small saucepan. Bring to a boil, then serve over chicken. Serves 4.
