Marian's Oven Fried Chicken Breasts

3 large skinless, boneless chicken breasts
3 to 4 Tbsp. olive oil
1 large egg
1/4 cup dry bread crumbs
1/4 cup all-purpose flour
2 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. dried basil
1/4 tsp. sea salt


Pre-heat oven to 375 degrees (400 degrees if using metal pan).

Pour enough oil in a 7-1/2 x 11-1/2" glass baking dish to just thinly cover the bottom (about 3 to 4 Tbsp.). Smear oil around with a pastry brush or your fingers to cover entire bottom of dish.

In a cereal bowl, beat egg until well blended. In a pie plate, combine bread crumbs, flour, chili powder, basil, garlic powder and salt. Stir with a fork until well combined.
Dip each chicken breast in egg and then in crumb mixture to coat well. Place chicken breast with what would have been skin side down, into dish. Turn over gently so that top will be coated with oil. It is important to allow the oil to fill back in so you don't place the meat down on the bare dish. Dab, with your fingers, any crumb mixture that did not get coated with oil, using the oil from the bottom of the pan.

Once all chicken pieces are done, sprinkle a light layer of additional crumb mixture on top of each chicken piece making sure that it gets absorbed by the oil already on the meat. Again, if some crumb mixture doesn't get absorb into the oil, just dab it with some oil from the bottom of the pan.

Bake for 35 minutes.

NOTE: for an added zip, you could put a 1/4 tsp. white pepper into the crumb mixture, or sprinkle prepared chicken with some freshly grated Parmesan cheese, before baking.
