Orange-Ginger Chicken

1 teaspoon dark sesame oil
1/2 teaspoon chili oil
4 (4oz) boned and skinned chicken breast halves
1/2 cup orange marmalade
3 tablespoons low-sodium soy sauce
1 tablespoon minced fresh ginger
1 tablespoon water
2 cloves garlic, minced
Hot lo-mein noodles, cooked
Chopped green onions


Cucumber Salad
2 cucumbers, sliced
1/3 cup rice vinegar
1 teaspoon sugar
1/8 teaspoon red pepper flakes
1 tablespoon chopped cilantro


Heat oil in nonstick skillet over medium heat. Add chicken; cook 6 min. on each side or until done.

Add marmalade and remaining ingredients, cook 2 minutes or until thick and bubbly. Remove from heat.

Slice chicken; arrange over cooked lo mein noodles. Sprinkle with chopped green onion.

Serve with cucumber salad.


Cucumber Salad: Combine all salad ingredients except cucumbers; mix well.

Pour over sliced cucumbers.
