Orange and Cardamom Chicken Wings
8 chicken wings
4 cloves garlic crushed
Finely grated rind of 1 large orange
6 tbs orange juice
1 tbs lemon juice
4 tbs oil
Seeds from 10 cardamom pods, crushed
Salt and pepper to taste
Wipe chicken wings with paper towels.
Cut off and discard tips.
Put wings into a shallow ovenproof dish.
Mix remaining ingredients together, pour over chicken and let marinate for at least 4 hours covered or up to 24 hours in refrigerator.
Preheat oven to 400° F.
Let chicken come to room temperature, then cook uncovered for about 30 minutes, basting once or twice.
Serve hot or cold.
