Chicken Parmesan

1 egg
2 tablespoons grated Parmesan cheese
1 cup Italian flavored dry bread crumbs
6 skinless boneless chicken breast halves, lightly pounded
4 tablespoons olive or vegetable oil, divided
6 ounces shiitake mushrooms, sliced
2 tablespoons dry red wine
1 (26 oz) jar marinara sauce
8 ounces fresh mozzarella cheese, sliced
Fresh basil or parsley, for garnish
Heat oven to 375° F.
Beat egg with 1 tablespoon water.
Stir Parmesan into bread crumbs.
Dip chicken in beaten egg, then coat with breadcrumb mixture.
Heat 2 tablespoons of oil in skillet over medium heat.
Brown chicken 3 to 4 minutes per side, until almost cooked through and golden brown.
Place in single layer in lightly greased baking pan.
Wipe out skillet.
Heat remaining oil and cook mushrooms 3 minutes, stirring often, until cooked through.
Stir wine into marinara sauce and spoon over cutlets.
Top with mushrooms.
Bake 10 minutes.
Top each cutlet with a slice of mozzarella and bake 10 minutes longer.
Garnish, if desired, with basil or parsley.
Yield: 6 servings
