Raspberry Basil Chicken
1 cup raspberry vinegar
2 Tbs. soy sauce
2 Tbs. minced fresh basil (2 tsp. dry)
2 Tbs. Dijon mustard
2 Tbs. honey
Pinch of black pepper
1 lb. chicken cutlets
Preheat broiler.
Combine vinegar, soy sauce, basil, mustard, honey, and pepper. Add chicken, turning to coat.
Marinate in refrigerator for 15 minutes.
Remove chicken from marinade. Reserve marinade.
Broil chicken in oven or on charcoal grill until done turning once to brown both sides.
Heat reserved marinade and simmer for 5 minutes, or until reduced by half. Serve over chicken.
Serves 4 to 6.
