30 Minute Miracles
Spicy Rebel Chicken
1 tablespoon olive oil
1 lb boneless, skinless chicken cut into 1 inch pieces
1/2 cup chopped onion
1 each red and yellow pepper, julienned
1 tsp minced garlic
1/4 tsp EACH cumin, ginger, turmeric and ground red pepper
1 can stewed tomatoes
2 tablespoons chutney
1/2 tsp salt
2 tablespoons chopped green onions
Heat oil in a large skillet over med high heat.
Stir in chicken, onion and peppers and saute until tender. Add spices and stir well.
Add tomatoes and break them up with the spoon.
Add chutney and salt.
Cook until thickened, about 10 minutes.
Serve over rice and sprinkle with green onions.
Microwave Rice:
2 cups rice
4 cups water
Cook 6 minutes on high and then for 15 minutes on 50%. Make sure you cover it.
