Chicken Fruit Salad
2 1/2 -3 cups cooked diced chicken
1 cup sliced celery
2 tbsp. chopped green onion or chives
1 tsp. salt
2 tbsp. lemon juice
1 (11 oz.) can mandarin oranges, drained
1/2 tbsp. grated lemon peel
2 tbsp. capers
1 (9 oz.) can pineapple chunks or tidbits
1/2 cup slivered almonds, toasted
1/2 cup mayonnaise
Combine chicken, celery, onion, capers. Mix in salt and lemon juice. Chill several hours.
Just before serving add fruit and almonds. Combine mayonnaise and lemon peel. Mix in carefully so as not to bruise fruit. Spoon into a bowl lined with lettuce greens to serve.
