Chicken Salad (10 servings)
5 cooked, boneless chicken breast.
1 cup chopped celery
1 cup white raisins
1 cup plain low fat or fat free yogurt
1/2 cup low fat or fat free mayonnaise
1 Tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon pepper
Chop chicken breast and combine with celery and raisins.
Combine yogurt and mayonnaise, lemon juice and seasonings and stir into chicken mixture. Chill in fridge before serving.
makes 10 half cup servings.
Variation: Instead of raisins you may use Craisins. Add 1/2 of a 7 oz can water chestnuts, chopped Add 1 teaspoon curry powder or to taste.
