Buffalo Chicken Wraps
1/2 cup Louisiana hot sauce, divided
2 T olive oil
1 tsp. minced garlic
1/4 tsp. ground pepper, divided
2 lbs. chicken tenders
Dressing: 1/3 cup sour cream
1/3 cup mayonnaise
3/4 cup blue cheese, crumbled
1 tsp. lemon juice
8 (10-inch) burrito size flour tortillas
3 cups shredded lettuce
3 celery ribs, strings removed, cut into thin strips.
Preheat broiler.
Whisk 1/4 cup of the pepper sauce, the oil, the garlic, and 1/8 tsp. pepper until blended. Add chicken. Cover and marinate in fridge for 30 minutes.
Mix dressing ingredients. Place chicken on a jelly roll sheet in 1 layer. Broil 6-8 minures, turning once, until cooked.
Spread each tortilla with 2 Tbl. dressing, leaving a 1/2 inch border. Divide and arrange a line of lettuce, chicken and celery about 1 inch from the bottom edge of each tortilla. Combine remaining 1/4 cup red pepper sauce and 1/8 tsp. pepper in a small bowl; drizzle over celery. Tightly roll up tortillas; wrap in waxed paper. Can be made ahead up to 2 hours. Place in fridge. Cut in half. Makes 8.
