Smothered Chicken
1 fryer, cut up
flour
salt and pepper to taste
vegetable oil
3 medium onions, chopped
Roll pieces of chicken in flour and pan fry in vegetable oil until brown; set aside until all pieces have been browned in oil.
Saute onions in the pan with the drippings where you browned the chicken. If you have too much oil in the pan, pour out some before adding the onions.
Add pieces of chicken and water to cover. Simmer for 1 hour or until chicken is done and makes a gravy.
Serve chicken and gravy over mashed potatoes or hash brown potatoes.
