Chicken: Smothered Chicken with Onions

Chicken Smothered with Onions
Bon Appetit October, 1993, page 59.

1 1/2 Tbl. butter
3 1/2-3 3/4 lb. chicken, quartered
paprika
2 large onions, sliced
3/4 cup white vermouth
2 bay leaves
14 1/2 oz. chicken broth
3 Tbl. flour
3 Tbl. water
1/4 cup whipping cream
1/4 tsp. ground mace or nutmeg
Mashed Potatoes


Sauté chicken about 10 minutes. Set aside.

Sauté onions, cover and cook 15 minutes, stirring occasionally. Set chicken on top of onions. Add bay and wine. Increase heat and boil until wine is nearly evaporated and mixture is syrupy, 8 min. Reduce heat, add broth and cook 30 min. Set aside.

Mix flour and 3 Tbl. water until smooth. Make sauce, add cream and mace. Boil until thick, 8
minutes. Return chicken and heat through. Adjust seasonings. Serve with mashed potatoes.
