Spring Chicken Chausseur
2 chickens, cut up
3 T. butter
1/4 c. flour
2 tsp. salt
1/4 tsp pepper
1/4 tsp thyme
4 green onions, cut
1/4 lb. fresh mushrooms
2 T. lemon juice
1 tsp sugar
1 tsp salt
1/3 cup apple cider
2 medium tomatoes (or use canned)
Heat butter in skillet. Mix the flour, salt, pepper, thyme and put in a paper bag. Add pieces of chicken a few at a time and shake in the seasoning bag. Brown thoroughly in the butter in the skillet. Add onions and mushrooms. Cover and simmer 3 minutes.
Mix lemon juice, sugar, salt and apple cider (or juice) and pour over the chicken. Cover and simmer for 5 minutes. Add tomatoes and cook slowly over low heat about 1/2 hour or until fork tender.
