Chicken Stew
1 whole chicken (4-5 lbs.) or 8 chicken breast halves, cooked, deboned, and chopped
1 (28 oz.) can diced tomatoes
3 large potatoes, diced
1 large onion, chopped
1/2 to 1 lb. okra, sliced
1 (14 oz.) can cream style corn or 1 small can cream style corn and 1 small can whole kernel corn
1/2 cup ketchup
1/2 to 1 cup barbecue sauce
Combine chicken, tomatoes, potatoes, onion, and okra in a 5-quart slow cooker. Set slow cooker on low and cook 8 hours or until potatoes are tender.
Add corn, ketchup, and barbecue sauce. Allow to cook 10 more minutes and serve.
Yield: 8-10 servings
