Chicken With Green Olives
3 Tbsp Extra Virgin Olive Oil
1 (3 Lb) Chicken -- Cut Into Serving Pcs
Salt
Pepper
1 Onion -- Chopped
2 Cloves Garlic -- Minced
1/2 C Red Wine Vinegar
1 Tsp Oregano
1 Bay Leaf
2/3 C Sicilian Olives -- Pitted
6 Anchovies -- Rinsed And Chopped
3 Tbsp fresh parsley -- Chopped
Heat oil in large saute pan.
Pat chicken pieces dry and add to pan.
Brown on all sides, about 15 minutes .
Season with salt and pepper and
remove from pan.
Discard all but 3 T of fat from pan.
Add onion and garlic
to the pan and cook until softened.
Return chicken meat to the pan, add
the vinegar and reduce on high heat for 1 minute.
Turn the heat to medium-low, add herbs, cover and simmer 15 minutes,
adding a few T warm water if pan becomes too dry.
Gently fold in olives, cover and cook 15 minutes.
Fold in the anchovies and parsley and heat 5 minutes.
