Chicken and Spinach Roll-Ups

6 tbsp. margarine
6 tbsp. flour
1 1/2 c. milk
1 c. heavy cream
1/2 c. dry white wine
1/4 tsp. ground nutmeg
1/2 tsp. salt
1/8 tsp. pepper
1 c. shredded Swiss cheese
1 (10 oz.) pkg. spinach, thawed and drained
2 c. finely chopped chicken
1 c. cream style cottage cheese
1 egg, beaten
1/2 c. grated Parmesan cheese
8 oz. lasagna noodles, cooked and drained


Preheat oven to 400.

In 2-quart saucepan, melt butter over medium heat. Remove from heat. Stir in flour until smooth. Gradually stir in milk, cream, and wine, 1/8 teaspoon nutmeg, salt and pepper.

Stirring constantly, cook over medium heat 3-4 minutes or until thickened, stir in Swiss cheese. Stirring constantly, cook over low heat about 1 minute or just until melted and smooth. Remove from heat.

In bowl, stir together 1 cup sauce, spinach, chicken, cottage cheese, egg, 1/4 cup Parmesan cheese and remaining nutmeg until blended.

Spread about 1/2 cup chicken mixture on each of 8 lasagna noodles. Roll up jelly roll fashion. Cut each in half crosswise.

Spread 1 cup sauce in bottom of 7x11 inch pan. Place rolls, ruffled side up, on top of sauce. Top with remaining sauce, sprinkle with rest of Parmesan cheese.

Bake 15 minutes or until heated.
