Chicken with Artichoke Salsa

1 (6 oz) jar marinated artichoke hearts -- drained and chopped
(reserve liquid)
1 large ripe tomato -- seeded and diced
1 small red onion -- diced
1 jalapeno pepper -- seeded and diced
2 tablespoons chopped fresh cilantro
1/4 teaspoon salt
pinch ground black pepper
2 tablespoons artichoke liquid
4 boned and skinned chicken breast halves -- pound to 1/2" thick
In a bowl, combine all ingred. except chicken. Let set at room temp. to
blend flavors. Meanwhile, prepare grill with hot coals, or heat gas grill
or broiler.
Brush chicken lightly with remaining artichoke liquid. Grill or broil 4"
from heat until browned and no longer pink in the center, 2-3 min. per
side. Serve chicken topped with artichoke salsa.
