Roast Cornish Hen
1 1/2 to 2 lb. cleaned Cornish hen
2 Tbsp. butter or margarine
1/8 tsp. pepper
1 tsp. salt
1 medium onion
1 pared carrot
1 stalk celery, cut up
4 strips bacon per hen
Start heating oven at 350 degrees. Rub body cavity of Cornish hen with butter, pepper and salt; place onion, carrot and celery in cavity. Close body opening with poultry pins, lace with white twine. With end of twine, tie legs to tail.
Place bird with breast side down on rack in shallow open pan. Place bacon strips across back. Bake 45 minutes, uncovered. Turn bird. Place bacon strips across breast. Bake 45 minutes longer or until tender.
Serve with or without gravy.
