Roast Cornish Game Hens
4 (12 to 15 oz.) Cornish game hens -- thawed
1 small jar plum jelly
1 cinnamon stick
1 box Rice-A-Roni fried rice mix with almonds, prepared according to directions
butter
salt and pepper
Heat oven to 425º F. Wash hens and pat dry.
Season hens inside and out with salt and pepper. Grease skin well with butter. Stuff hens with prepared rice. Place breast side up on racks in roasting pan that has been lined with foil. Roast approximately 1 hour.
Heat jelly with cinnamon stick. Start basting birds with jelly halfway through cooking. Turn over after basting, if needed.
Serves 4.
