Rock Cornish Game Hens with Apricot Glaze

6 rock Cornish game hens (1 lb. each)
salt and pepper
butter
1 jar apricot preserves
1 Tbsp. brandy
2 onions
celery stalks
parsley for garnish


Preheat oven to 400° F. Rub hens inside and out with salt and pepper.

Place a few pieces of celery and a quarter of an onion inside each hen. Rub with butter and roast for 25 minutes at 400º F. Baste with butter periodically.

Lower heat to 350º F. and roast 25 minutes longer, continuing to baste.

Melt apricot preserves and brandy in saucepan. With a pastry brush, glaze birds and cook 10 minutes more or until done.

Garnish cavity opening of hen with fresh parsley sprigs.

Serve with wild rice or stuffing.
