Baked Goose
1 (8 to 10 lb) goose
3/4 cup flour
1 lb salt pork
2 cup chopped onion
1 Tbls salt
1 tsp black pepper
2 cup good wine
8 oz egg noodles
6 cup shredded cabbage
Preheat oven to 325° F.
Remove all skins and fat from goose and save. Cut up goose in small serving pieces, flour, salt and pepper.
Cook fat and skins in pan. Brown goose in the fat oil and set aside. Cut salt pork in small even cubes and brown in roaster.
Drain and pour in the onions, add the browned goose. Pour 2 cups of good wine and bake 2 to 3 hours at 325*.
Cook noodles as directed on package. Add butter.
Cook cabbage for 6 min in a covered pan. On a platter put cooked buttered noodles, cabbage and goose with sauce.
Serve hot.
