Feta Chicken
4 skinless, boneless chicken breast halves
dry breadcrumbs
1/4 cup crumbled feta cheese (1 ounce)
fresh chives, basil, and/or whatever herbs you like
2 Tblsp butter, melted
Preheat oven to 400° F.
Pound chicken breasts to 1/4-inch thickness. Rinse
under water and shake off excess.
Dredge in
breadcrumbs.
Spoon 1 Tblsp feta onto each piece
of chicken, along with a sprinkle of herbs. Fold
breast in half.
Place folded chicken in a baking dish and drizzle
melted butter over.
Bake, uncovered at 400 degrees
F for 25 minutes or until chicken is done.
