Red Chicken with Artichokes and Feta

1 tablespoon veg oil
1 medium onion -- diced
3 cloves garlic -- minced
1 (14 oz) can diced tomatoes with juice
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/3 cup whipping cream -- optional
1 (8-1/2oz) can green peas -- drained
1 (13-3/4oz) can artichoke hearts -- drained and chopped
salt to taste
4 boned and skinned chicken breast halves -- slightly pounded
3/4 cup (6 oz) crumbled feta cheese
Heat oven to 450 degrees.
In 2-qt. saucepan, heat oil over medium heat and saute onion 3 to 4 minutes or until transparent. Mix in garlic and saute 1 minute.
Mix in tomatoes, basil, oregano,and pepper. Cook, stirring occasionally,
10 min. Mix in cream, peas, and artichoke hearts. Simmer 5 min.; season
with salt.
Arrange chicken breasts, spaced apart,in shallow baking pan. Top with
tomato mixture, then cheese, dividing equally. Bake about 25 min., just
until juices run clear when pierced with a knife.
