Roast Cornish Game Hens with Stuffing:
1 box Stove Top Stuffing® (chicken flavored), prepared
2 Cornish game hens
2 tablespoons melted butter or margerine
salt and pepper
Heat the oven to 350 F. Fix the stuffing according to package directions.
Rinse the hens and use your fingers to clean out the inside as good as
possible.
Stuff each hen with stuffing, place hens (breasts up, wings tucked under
their backs) in a baking dish, try not to have them touching, a 13"x9"x2"
dish will work. You can buy foil baking pans at most supermarkets, so when
you're done you can just throw them away.
Drizzle melted butter or margarine over each hen. Sprinkle with salt and
pepper. Bake hens at 350 F for an hour, if they each weigh less than 16
ounces or for an hour and twenty minutes if they weigh more.
Turn the heat up to 400 F for the last 10 minutes of cooking to brown the
hens. When done the leg should pull away from the body and the juices
should run clear, not pink.
