Dottie's Chicken Salad
3 Chicken breast, 3 legs, and 3 thighs skin on
1 to 1 1/2 cups red seedless grapes, cut in half
3/4 cup frozen peas, thawed
1 cup Kojak, Colby, or Cheddar cheese diced
3/4 cup celery, sliced
1/3 cup slivered almonds
Except for the chicken the measurements are approximate.
Place chicken in a pot and cover with water, season with salt & pepper to
taste and add a bouquet garni.
Cook about 30-45 minutes or until chicken is done. Take chicken out and
when it is cool enough it needs to be diced and refrigerated.
The stock is great for freezing for future use.
When the chicken is cold
add the grapes, peas, cheese, celery, and
almonds and toss.
Dressing:
3/4 cup Miracle Whip® or Mayonaise
1 Tablespoon mustard
1 teaspoon sugar
2-3 Tablespoons of vinegar
Mix these ingredients then thin with milk to a consistency of salad
dressing.
Pour over salad and toss. Serve
