Oriental Chicken Salad
1 package chicken flavor Top Ramen
2 boneless, skinless chicken breasts, cooked and cubed
1/2 head lettuce, shredded
2 green onions, thinly sliced, green tops included
2 T. toasted sesame seeds
1/4 cup slivered almonds
Dressing
2 Tbl. sugar
2 Tbl. vinegar
1/2 Tbl. sherry
1/2 Tbl. soy sauce
1/4 tsp. pepper
1/8 tsp. salt
2 1/2 Tbl. oil
Cook Top Ramen according to package directions; drain and set aside to cool.
In a large bowl, combine chicken, lettuce, onions, sesame seeds, almonds and cooled Top Ramen noodles.
In a small saucepan, combine sugar, vinegar, sherry, soy sauce, pepper and salt. Bring to a boil and simmer until sugar is melted, about 5 minutes. Cool.
When dressing is cool, add oil and mix well. Pour over salad and toss
to mix well. Chill in refrigerator, or serve
immediately. Yield: 4 servings.
