Savory Chicken over Couscous
1 1/2 pounds boneless chicken breasts, cubed
1 tablespoon olive oil
3/4 cup chopped onion
2 cloves of garlic, minced
1 Jalapeno pepper, seeds removed, diced
1 tablespoon dried tarragon
1 1/2 cups tomato juice
3/4 cup dried apricots, halved
salt & pepper to taste
1 cup cooked couscous
Fresh tarragon for garnish
In a large skillet, brown chicken in oil.
Add onion, garlic, jalapeno pepper, tarragon, and cook until onions are tender.
Stir in tomato juice and apricots--simmer for 15 minutes or until chicken is done.
Add more V-8 juice if you want more liquid.
Serve hot over prepared couscous, and garnish with fresh tarragon.
