Buttermilk Pecan Turkey Cutlets
3/4 cup (1 1/2 sticks) butter
1 1/2 cup buttermilk
1 egg, slightly beaten
1 cup flour
1 cup ground pecans
1/4 sesame seeds
1 tablespoon paprika
1 tablespoon salt
1/8 teaspoon pepper
8 Turkey Cutlets
1/2 cup pecan halves chopped
Preheat oven to 350 degrees F. Place butter in large shallow roasting pan and melt in oven. Remove and set aside.
Mix buttermilk and egg in shallow dish. Combine flour, ground pecans, sesame seeds, paprika, salt and pepper in medium bowl. Coat turkey cutlets in buttermilk mixture, then in flour mixture. Turn to coat both sides with butter as the cutlets are arranged in a single layer in the roasting pan.
About half way through the cooking time scatter pecan halves over the turkey cutlets. Bake until turkey is deep golden brown .
