Smoked Turkey Sausage and Rice

1 lb. smoked turkey sausage -- sliced
1 1/2 cups long-grain white rice
2 3/4 cups hot water
3 tsp. chicken bouillon granules
3 tbsp. tomato paste
2 stalks celery -- sliced
1 bunch scallions -- chopped
1 large bell pepper -- chopped
1 small zucchini -- chopped
salt and pepper
1 (16 oz.) can tomatoes -- undrained


Combine water, chicken bouillon and tomato paste. Whisk well. Set aside.

Place celery, bell peppers, zucchini and scallions in crockpot. Cover with rice, tomatoes, and water mixture. Sprinkle with salt and pepper. When rice is cooked, water is absorbed, turn off crockpot. This should take about 4-5 hours at HIGH. Serve with soup or salad and some good hearty bread.
