Turkey Picadillo
3 TBS oil
1 large onion, chopped
1 green pepper, chopped
1 lb. ground turkey
1 (14 1/2 oz.) can diced tomatoes
1 tsp. dried oregano
salt and pepper
1/3 C raisins
1/2 C sliced green olives
2 TBS capers, rinsed and drained
Heat oil in large skillet. Add onion and green pepper. Sauté over medium heat until tender, about 7
minutes. Add turkey and sauté, stirring, until color changes. Add tomatoes, oregano, salt and pepper to taste, and raisins. Bring to boil. Simmer over medium heat 5 minutes. Remove from heat and stir in olives and capers. Serve over rice or rolled in hot tortillas.
